I have not set up a server in years, and I was a big fan of ES, and until today did not know ES was no longer supported (sad)
However, the issue I used to run into was the constant updates, which caused the server not to function.
It became a pain in then butt trying to replace or substitute good scripts or plugins.

So I am wondering if there is a way to set up a server that does not allow updates, that I can use with friends.

That won't work. Players won't be able to connect to your server if it is running an older version than their client.

I am only interested in having friends play on the server, not open to the public

Still, your friends won't be able to connect if version mismatches, which means they will have to run an older version to play on your server preventing them to play on any others.

Since this will be the only server they will play on, they already understand and have no interest in playing on other servers.
This is just a coop venture with my friends and I, on one server.

If this is not possible then I will have to live with the updates...

Meanwhile in Soviet Russia shared hostings allow you to host v34 CS:S servers. Though, you won't get support for such server neither from SP or SM community.

The question is more if you can run older versions on CS:S, I know that when a new CS:GO update came out, you coulda still play the old one with -beta versionnumber parameter. Don't think they have all versions available to download tho.
